September 13th we will have a very special guest at breakfast – the 18th President of the United States, General U.S. Grant.  Hailed for his military genius, General Grant served two terms as President from 1869 – 1877.

Garden Oven Omelet

Garden Oven Omelet Recipe

At the Farmers Guest House, Susan Steffan uses farm fresh, locally sourced ingredients whenever possible. Her Garden Oven Omelet is a perfect springtime example of this, and a big favorite with guests. Served with fresh fruit, muffins and farm fresh meats, this is a meal that keeps guests walking the historic streets of Galena, IL for hours!
Ingredients:

1 stick butter, melted
1 ½ c flour
¾ tsp salt
¼ tsp pepper
21 fresh eggs
3¾ cup cottage cheese or whipped ricotta
3 cup shredded cheddar cheese
¾ cup chopped onion
¾ cup chopped green/red pepper
2 cup chopped asparagus

Preparation:
