Deconstructed Muffin with Apple Brandy Sauce

Sometimes our best recipes are the product of necessity.  I recently made a batch of amazing Morning Glory Muffins; however, I left too much pineapple juice in the pineapple and the muffins fell apart!  I put the muffin pieces in bowls, created a lovely apple brandy sauce for the top and, voila! a fabulous breakfast treat.
