Bananas Foster

I had a guest ask if I could make Bananas Foster French Toast and of course I said “yes!”  Here’s the recipe I came up with.







Bananas Foster French Toast

Serves 18
12 eggs
3 cups whold milk
1/4 cup sugar
2 tsp ground cinnamon
2 sticks butter + some for griddle
2 loaves French bread
2 cups brown sugar
1 cup maple syrup
2 cups pecan halves or pieces
3 tsp rum extract
8 bananas, sliced

Cut French bread into 36 slices.  Each loaf should yield about 18 slices about 3/4″ thick.  Whisk eggs, milk, sugar and cinnamon in a large bowl.  Dip French bread slices in egg mixture and place in large, flat pans like a jelly roll pan.  After all the bread has been dipped, evenly pour remaining egg mixture over the bread in the pans and let it sit for a few minutes to soak up egg mixture.  Melt 1-2 tsp butter in a griddle or large, flat skillet.  Place bread slices on the hot griddle.  Cook 2-3 minutes on each side until browned.  Remove to cookie sheets.  Bake the French toast in a 350 oven for 20 minutes to set the egg in the center.  In a large skillet melt 2 sticks of butter, then add brown sugar and maple syrup.  Bring to a low boil and simmer for 2 minutes longer to dissolve sugar.  Add banana slices, pecans and rum extract.  Simmer for one minute more and serve over French toast.
