Garden Oven Omelet

Garden Oven Omelet Recipe

Her Garden Oven Omelet is a perfect springtime example of this, and a big favorite with guests. Served with fresh fruit, muffins and farm fresh meats, this is a meal that keeps guests walking the historic streets of Galena, IL for hours!
Ingredients:

1 stick butter, melted
1 ½ c flour
¾ tsp salt
¼ tsp pepper
21 fresh eggs
3¾ cup cottage cheese or whipped ricotta
3 cup shredded cheddar cheese
¾ cup chopped onion
¾ cup chopped green/red pepper
2 cup chopped asparagus

Bananas Foster

I had a guest ask if I could make Bananas Foster French Toast and of course I said “yes!”  Here’s the recipe I came up with.

 
 
 
 
 
 
Bananas Foster French Toast
Serves 18
12 eggs
3 cups whold milk
1/4 cup sugar
2 tsp ground cinnamon
2 sticks butter + some for griddle
2 loaves French bread
2 cups brown sugar
1 cup maple syrup
2 cups pecan halves or pieces
3 tsp rum extract
8 bananas, sliced
Cut French bread into 36 slices.  Each loaf should yield about 18 slices about 3/4″ thick.  Whisk eggs, milk, sugar and cinnamon in a large bowl.  Dip French bread slices in egg mixture and place in large, flat pans like a jelly roll pan.  After all the bread has been dipped, evenly pour remaining egg mixture over [...]

“This innkeeping journey of ours began on our honeymoon,” smiles Susan Steffan. “We rode off into the sunset from our reception to a b&b.” It was the first b&b experience for Susan and Don. Converted b&b goers, they discovered that they loved the lifestyle. In fact it fit their whole family – nine children and all, so they prepared thoroughly to go into the business. “It was a blast,” she laughs. “We did B&B practice every weekend! Gluten-free Pancakes

Kristy asked for this one on our facebook so, here you go!
 
Gluten Free Buttermilk Pancakes
1 ½ c buttermilk
1 ¼ c vegetable oil
2 large eggs
2 t vanilla extract
3 c gluten-free flour blend
¼ c sugar
2 t  baking powder
2 t baking soda
½  t salt
 
Mix together liquid ingredients.  Add dry ingredients to bowl and mix all at once after all ingredients are added.  For thinner batter add a bit more milk.
