Mocha Latte Pancakes

Susan and Don Steffan have been welcoming guests to the Farmer’s Guest House in Galena, IL since they took ownership of the building in 2012 — literally.
The couple had their first guests stay with them the day they took the keys, and they’ve entertained hundreds since then. Because much of the town of Galena is on the National Historic Register and there are many shops and historic sites to visit, guests sometimes need a super-charged breakfast to get them buzzing through the day. That’s where this recipe comes in.
With a dash of chocolate, a shot of espresso and high-protein ricotta cream it definitely satisfies and sends visitors off into their days with a snap in their step and a smile on their face!
Ingredients:
Ricotta Cream
1 ½ Cup whipped ricotta ¼ Cup powdered sugar Dash of cinnamon Mocha Syrup 1 ½ Cup sugar 2 Tablespoons cocoa ½ Cup espresso or strong coffee 1 Tsp vanilla Dash of saltMocha Latte Pancakes
1 Cup flour 1 Tsp baking powder ½ Tsp salt 2 Tbs cocoa 1 Egg 2 Tbs sugar ½ Cup cream or half and half ½ Cup espresso or strong coffeePreparation:
For the Ricotta Cream
Mix ingredients until smooth. Refrigerate until ready to use.
For the Mocha Syrup
Add all ingredients except vanilla to a small saucepan and cook over medium heat until boiling. Stir for two minutes. Remove from heat, add vanilla. Cool to serve.
For the Mocha Latte Pancakes
In a medium bowl blend flour, baking powder, salt and cocoa until no streaks remain. In a small bowl, beat egg and sugar with a whisk. Add milk and coffee and whisk until completely blended. Cook pancakes on a griddle, flipping when small bubbles appear. Add a dollop of Ricotta Cream, drizzle with Mocha Syrup and sprinkle with chopped chocolate if desired.
