Pumpkin Muffins

1 egg
3/4 cup milk
1/2 cup canola oil
1/2 cup canned pumpkin
1 cup  flour
1 cup ground oatmeal
1/3 cup sugar
1 tsp cinnamon
1/2 tsp nutmeg
3 tsp baking powder
1 tsp salt
Heat oven to 400.  Grease bottoms of about 12 muffin cups.  Beat egg, milk, oil and pumpkin.  Stir in remaining ingredients all at once just until flour is moistened.  Fill muffin cups about 3/4 full.  Sprinkle with course sugar if you like.  Bake 17 – 20 minutes.  Remove from pan onto wire rack immediately.  Serve warm.
