Baked Blueberry French Toast



Baked Blueberry French Toast- a sweet, fruity start to your morning!

12 eggs
2 ½ cups whole milk
½ cup maple syrup
1/3 cup sugar
1 ½ teaspoons ground cinnamon
¼ teaspoon salt
1 Tablespoon grated orange or lemon peel
1 Tablespoon vanilla
12 slices Texas Toast cut in 1” cubes
2 cups fresh or frozen blueberries

Preheat oven to 350˚F.  Butter a 9×13 inch baking dish and set aside.  In a large mixing bowl, beat eggs, milk, maple syrup, sugar, cinnamon, salt, orange peel and vanilla.   Stir in bread and berries.  Pour into the baking dish.  Bake for 50 – 60 minutes until center is set.  Let stand for 10 minutes.  Cut into serving pieces, plate, dust with powdered sugar or a dollop of whipped cream, garnish with orange slices, and serve with bacon and maple syrup.  Amazing!
