Garden Veggie Frittata

Garden Veggie Frittata – A light breakfast egg entree, infused with fresh garden greens- what a way to begin a day!
1 Roma tomato chopped
1/2 c zucchini chopped
1/2 c yellow or orange sweet pepper chopped
1 green onion chopped
2 T evoo (extra virgin olive oil)
6 eggs
1/4 c grated cheese – I use a blend of Asiago, Parmesan and Romano
1/4 ricotta cheese or 1/2 c shredded mozzarella
chopped chives (optional)
1. Beat eggs in a bowl and add grated cheese.  In a large skillet with lid (use the lid later) sauté the zucchini and peppers until soft, add onion and tomato and toss.

Hummingbird Watch

Nested Eggs

This one is so easy and is a classic from the 1950’s

Press 1/2 c of corned beef hash in an 8 oz ramekin or individual casserole forming a well in the middle.  Break two eggs into the well.  Bake in a 350 oven until eggs are set, about 24 minutes.  Sprinkle chopped green onions, shredded cheese or other garnish over the top and serve. Beat the Summer Heat with Cold Hors d’ Oeurves

 
 
 
These Cold Hors d’ Oeurves are great for any summer party and little preparation is required!  These light and simple recipes are a sure way to keep guests cool and satisfied!
 
Tuna Salad on Cocktail Rye
1 can tuna in water, drained
1/3 c mayo
1/4 c sliced olives
1/4 c chopped dill pickle
Mix well, chill and spread on cocktail ryes
Garnish with a chunk of diced tomato or cucumber
 
Fruit Skewers
Chunk pineapple
Large grapes
Strawberries, stems removed
Chunks of melon

Don and Susan’s Ribbon Cutting Celebration

 
On Wednesday June 27th, Innkeepers Susan and Don hosted a Chamber of Commerce Ribbon Cutting Ceremony at the Farmers Guest House. New innkeepers Susan and Don have experienced an action packed beginning. Between their move, managing events at Farmers Guest House, improving the Inn, and keeping up with the daily tasks, both Don and Susan have had their hands full. With such a fast paced beginning, both Innkeepers agreed that it was finally time to slow down for an evening of celebration! The ribbon cutting was held at the front door of Farmers with celebratory refreshments and Hors d’oeuvre served inside.
