Strawberry Bread

Susan’s collection of secret recipes is stacked with delicious recipes! This week is the perfect opportunity to share with you a sweet bread that the Farmers Guest House visitors love so much. This recipe was handed down from our housekeeper, Charles, and his mother.  Strawberry Bread is a delicious combination of strawberries in moist and irresistible bread. STRAWBERRY BREAD

 

2 large eggs

1/2 cup vegetable oil

1/2cup orange juice       

1 cup sugar

1/2 cup vanilla extract

1/2 teaspoon almond extract

1 2/3 cups all-purpose flour

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon orange peel

1 1/2 cups chopped strawberries (fresh or lightly drained frozen)

1/2 cup chopped nuts of your choice.

 

Preheat oven to 350F – grease 5 by 9 inch pan and set aside

 

In a large bowl, beat the eggs until foamy.  Add the oil, orange juice, vanilla and almond extracts and mix well.  In another bowl, sift together the flour, baking powder, baking soda and salt.  Add to the oil mixture and stir until just barely moistened.  Add the strawberries and nuts and stir only to incorporate, being careful not to over mix.  Pour into the prepared pan and bake until nicely browned and a toothpick inserted in the center comes out clean, 50 minutes to 1 hour.
